Crockpot Cuban Ropa Veija
I wish I had a picture but I left my camera at work over the weekend. I made this on Saturday and it was so good. I got the recipie from allrecipies.com My substitutions are in red.
Ingredients:
Directions:
- Heat vegetable oil in a large skillet over medium-high heat. Brown the flank steak on each side, about 4 minutes per side.
- Transfer beef to a slow cooker. Pour in the beef broth and tomato sauce, then add the onion, bell pepper, garlic, tomato paste, cumin, cilantro, olive oil and vinegar. Stir until well blended. (I combined all of these ingredients in a bowl and then poured over the meat in the slow cooker)
- Cover, and cook on High for 4 hours, or on Low for up to 10 hours. When ready to serve, shred meat and serve with tortillas or rice. (I actually cooked mine for 7 hours on Low, took the meat out and shredded it and then put the shredded meat in the crockpot, gave it a good stir and cooked on Low for another hour)
Husband and I loved this one. I ate mine with rice which soaks up the juice nicely. Hubby had his wrapped up in a tortilla (well, actually 4 of them)

What a sweet husband!
I wish I had pictures, but unfortunately I don’t. R had to go to the doctor to have blood work done on Monday. He ended up having to take the whole day off of work because the doctor gave him a pain shot for his back. So he decided to not only go grocery shopping (which he hates) but cleaned the house, he made peanut butter cookies and chocolate chip cookies from scratch and had steak/chicken/shrimp fajitas ready for dinner when I got home. Love him!
Needless to say, I’m going to see if I can pay the doctor to give him a shot more often (just kidding)

Random things about me 26 – 50
26. The worst pain I’ve ever felt was having my tonsils removed at 30.
27. I had to have 52 stiches when they removed my tonsils.
28. I can’t sleep without a handmade quilt.
29. My great-grandmother lived to be 102.
30. My favortie color is purple.
31. My lucky number is 7. Not only was I born on the 7th at 7:00 pm and weighed 7 pounds, I got married on 7/7/7.
32. I have a tattoo on my ankle and on my back, both are dolphins.
33. I used to collect dolphins.
34. When I was in college I wrote all of my term papers on the beach.
35. I’ve had two red cars, two black cars and two silver cars.
36. I used to love to eat rice with brown gravy.
37. I like to eat radishes and ramps. (in small doses)

39. My favorite ice cream is Ben and Jerry’s Chubby Hubby.

Random thought day…
Do you ever have one of those days where you just sit and wonder about thing? Like, why is the sky blue? Lately (especially when I’ve been trying to fall asleep) my mind has just been racing with these random thoughts and today, I thought I’d put them down in my blog (maybe now I can get some sleep!)
1. Why do honest, hard-working people have to struggle?
2. Why would someone who gets free healthcare want someone else to pay for them to have healthcare?
3. Why do people have children when the don’t want the responsibility of being a parent?
4. Why do things that we would have never thought to do when we were kids growing up, seem so common place today?
5. Is it me or is there a lack of respect in the world today?
6. Why do some parents teach their children to manipulate the system and take what they can from people instead of the importance of earning what you have?
7. They say that your environment and how you were raised has a lot to do with who you are as a person, if that’s true, why can you have two people were raised the same way in the same background be completely different?
8. Supposedly you learn from your mistakes, then why do some people continue to make the same ones over and over again.
9. Everything supposedly happens for a reason, can someone please explain to me what those reasons are?
10. (And on a lighter note) What is my dog really saying when she “talks” to me?

Random things about me 1-25
Well, Call me a follower, but I needed a post
Now, if I can actually come up with 25 random things…..
1. I was born in Colorado.
2. I have lived in Colorado, West Virginia, South Carolina, Maryland, Florida and Virginia.
3. I have moved 28 times in 34 years.
4. I took tap, ballet and jazz lessons for 15 years.
5. I didn’t make my high school dance team.
6. I was a marine biology major and minored in marketing in college.
7. I worked at the Federal prison in Miami.
8. I used to work for a swimwear manufacturer in Miami.
9. I miss eating Cuban food.
10. I got a certificate for reading 304 books in third grade.
11. I learned to read at the age of 3.
12. The last concert I went to was Poison, Skid Row and Vince Neil in 2003.
13. I had my tounge pierced for approximately a month.
14. Listening to people hack a loogie makes me want to puke.
15. My aunt wanted to name me Chastity.
16. I wore glasses and braces until the summer before 9th grade.
17. I worked at a bikini car wash one summer during college.
18. I bartended for 11 years as a side job.
19. My favorite drink to make is a sexy green alligator, but I hate to drink them.
20. I am allergic to feather pillows and oak trees.
21. I like to eat pancakes with no syrup but put syrup on hasbrowns.
22. I quit a job once because the boss wanted me to clean the toilet.
23. I went through a phase when I was 10 where I had to eat everything with chopsticks, even cereal.
24. I wish I was independently wealthy.
25. I DVR too many reality tv shows.

Yummy Pepper Steak
1 lb of steak cut into little pieces (I used cubed steak last night but strip steak is good too)
1 green pepper sliced and diced into little pieces (you can add red and yellow peppers, too)
1 onion sliced and diced
EVOO
1 pkg brown gravy mix (powdered kind)
1 tbsp soy sauce (I use low sodium)
Directions:
Pour some olive oil in a skillet and heat over medium-low heat. Add green peppers and onions. Cook peppers and onions until they soften but not until they’re brown. Add meat and cook until brown or a little pink left depending on how you like your meat cooked. Turn heat down and sprinkle brown gravy mix on top of meat. Add 1 cup of water (as per gravy package directions) and mix thouroughly. Add 1 Tablesppon of soy sauce. Let sauce thicken. That’s all there is to it.
I like mine served over rice, but my husband hates rice so I make mashed potatoes for him.
